Ingredients

  • 1 tbsp olive oil
  • 1 large onion
  • 1 red pepper
  • 1 garlic clove
  • 2 tins of mixed beans in water
  • 500ml of tomato passata
  • 20g mild chilli powder (or hot if you like spice)

Fibre rich and fuss free dinner that can be adapted to suit different preferences eg add cheese or guacamole or salad

Cooking Steps

    Crush the garlic using the edge of a knife and chop the onion and pepper into small pieces

    Heat the oil in the pan on a medium heat and add the garlic

    After 1 minute add in the onion and peppers and cook until soft

    Drain the beans and add to the vegetables

    Add in the tomato passata, mix thoroughly and heat until bubbling

    Add in the chilli powder and mix thoroughly

    Cook on a low heat for 15 minutes

    Serve with brown rice or in a wholewheat wrap
