Ingredients

  • 1 large onion
  • 1 large carrot
  • 1 garlic clove
  • 2 tsp olive oil
  • 400g firm tofu
  • 200g brown rice
  • 200g peas
  • 1 low salt vegetable stock cube
  • 2 tbsp mild curry powder
  • 1/2 teaspoon chilli powder
  • 1 tsp turmeric
  • 1/4 tsp cinnamon
  • Handful of fresh coriander (optional)
  • 2-3 tbsp raisins (optional)

This recipe is perfect for meal prep because the sauce saves it from going dry and it reheats well. You can replace tofu with other sources of protein such as chickens or prawns.

Cooking Steps

    Chop the onion, garlic and carrot and dice the tofu into small square size pieces

    Heat the oil in a large pan, add in the onion and garlic and cook until soft
  • 3
    Add in the carrot and heat for a further 2 mins, stirring occasionally
  • 4
    Add in the spices (curry powder, chilli powder, turmeric and cinnamon) and cubed tofu and mix thoroughly

    Add in the rice and peas, along with the stock cube and 750ml of water

    Bring to the boil then simmer on a low heat for 40 minutes, stirring occasionally

    Stir in the fresh coriander and raisins and serve
