Cooking Steps
- 1Chop the onion, garlic and carrot and dice the tofu into small square size pieces
- 2Heat the oil in a large pan, add in the onion and garlic and cook until soft
- 3Add in the carrot and heat for a further 2 mins, stirring occasionally
- 4Add in the spices (curry powder, chilli powder, turmeric and cinnamon) and cubed tofu and mix thoroughly
- 5Add in the rice and peas, along with the stock cube and 750ml of water
- 6Bring to the boil then simmer on a low heat for 40 minutes, stirring occasionally
- 7Stir in the fresh coriander and raisins and serve
