Ingredients

  • 1 large avocado
  • 1 garlic clove
  • 1 tin of cannellini beans
  • Juice of half a lemon
  • Handful of fresh coriander
  • 2 slices of sourdough bread

Cooking Steps

    Toast your sourdough

    Mash the avocado in the bowl

    Chop the coriander

    Crush the garlic using the edge of a knife or garlic crusher

    Drain and rinse your beans

    Add the crushed garlic to the avocado and mix thoroughly

    Add in the beans, coriander and lemon juice to the avocado mix

    Split the beans and avocado between the 2 slices of toast

    Top with additional coriander (optional)
