Ingredients

  • 1 tsp olive oil
  • 400g king prawns
  • 240g brown rice
  • 400ml tomato passata
  • 1 large onion
  • 1 large red pepper
  • 2 garlic cloves
  • 1 low salt stock cube
  • 500ml of water
  • 2 tbsp harissa paste
  • Handful of chopped parsley (optional)

This is a really tasty meal prep option that can be reheated. It also works well with other protein sources like tofu or chicken.

Cooking Steps

    Crush the garlic with the edge of a knife or garlic crusher

    Heat the oil in the pan and add the garlic
  • 3
    Chop the pepper and onion into small pieces and after 2 minutes add to the pan and cook until soft

    Add the harissa paste, prawns and rice and stir until rice is covered

    Add the tomato passata, water and stock cube and bring to the boil

    Leave to simmer for 40 minutes on a low heat

    Serve and sprinkle with parley
